Five Ways to Cook Killer Corn

While she moved off her father’s large farm years ago, Carrie Stark still maintains a small garden and loves to teach her friends how to cook sweat corn.
Corn boiled in a pot over the stove is the traditional go to method for cooking corn. There are other methods that produce scrumptious results. Here are five recipes to transform your corn experience.
Grilled Corn
Grilled corn is an easy alternative that will complement a grilled chicken or steak.
What you need: corn, tin foil, and a grill. Also choose whatever spices or additions that you would like to season your meal.
1. The first step in this scrumptious meal is to shuck the corn.
2. Once shucked wrap the corn in tin foil.
3. Place butter, olive oil, or any other spice of choice inside the wrapping.
4. Seal the container.
5. Place the corn on the grill. As the corn cooks the added flavors will enhance the quality of the corn.
Microwaved Corn
Usually I am of the opinion that nothing kills a meal faster than the microwave. Much to my surprise I tried this very easy method of cooking and could not be happier. I admit grilled corn is better, but what you lose slightly in taste you earn back in time and convenience.
What you need: a microwave safe bowl, plastic wrap, corn, and water.
1. To start this simple recipe place the shucked and halved corn in the bowl.
2. Fill the bowl with water.
3. Loosely wrap the plastic wrap around the edge of the bowl.
4. Heat the water for two minutes before taking the bowl out and checking the firmness.
5. Repeat step four until corn is juicy.
Sautéed Corn and Cherry Tomatoes in Apple Cider Vinegar
Who doesn’t love vinegar? Well I’m sure that there are some no-goers out there, but for all the vinaigrette lovers this recipe combines two things we love: corn and vinegar.
What you need:8 ear of corn, 2 tablespoon olive oil, a clove minced garlic, pint cherry tomatoes, ¼ teaspoon salt, ¼ teaspoon black pepper, 2 tablespoons apple cider vinegar, 3 scallions, and a wok.
1. The first step is to remove the kernels from the cob, chop white and green parts of scallions, and halve tomatoes.
2. Heat oil on medium heat in wok. If you’re not sure if the oil is hot enough, throw some water in and leap back. If it bubbles and spits, move onto the next step.
3. Add garlic and sauté until the garlic turns gold.
4. Add corn kernels, stir, and then allow them to cook for 4 minutes.
5. Add cherry tomatoes and cook for additional two minutes. Stir occasionally.
6. Add salt and pepper or any other seasoning that you desire.
7. Pour in the apple cider vinegar and cook for another minute.
8. When most of the liquid has evaporated, turn off the heat to the wok and then stir in the scallions.
This creation is a nice addition to any chicken or fish meal or pour it into a bowl and enjoy.
Roasted Sweet Corn Salsa
Salsa is a nice snack to serve before any meal. So for the next Killer Corn Recipe I suggest blending corn into a salsa.
What you need: 4 ears of corn, 1 can of black beans, one cup chopped red bell pepper, 2 tablespoons chopped cilantro, 2 tablespoons olive oil, 3 tablespoons lime juice, ½ teaspoon hot pepper sauce, and ½ teaspoon salt.
1. Husk and chop all items to prep the recipe.
2. Preheat the oven to 500 degrees.
3. Place one tablespoon of olive oil and the ear of corn in a roasting pan.
4. Cook the corn in the oven until the kernels turn golden. Turn corn in order to achieve even cooking. This step should take about seven minutes.
5. Remove from the oven and then cut the kernels from the cob.
6. Combine corn, black beans, the bell pepper, the cilantro, the lime juice, one teaspoon of olive oil, the hot pepper sauce and salt in a large bowl.
7. Stir until blended.
And voila homemade salsa that the entire family can enjoy. Pull out the chips and dig in.
Oven-Barbecued Corn, Shrimp and Chicken
As allergic to shrimp as we are, my brother and I swear by this meal. If people who get an annoying tickle in the back of their throat when they eat the meal love it, then people whose throats don’t swell as the meal continues won’t be able to put it down. What you need: What you need: 8 ounces of shrimp, 4 ears of sweet corn, 1 pound chicken thighs, and ½ cup barbecue sauce, boiler pan.
1. Preheat the oven to 425 degrees.
2. Shuck the corn, clean the shrimp, and the chicken, corn, and shrimp into a boiler pan.
3. Brush the barbecue on the chicken, then the corn, and finally the shrimp.
4. Roast the meal for about ten minutes, occasionally turning the chicken, shrimp, and corn for even browning.
5. Remove the meal from the oven, dish it out, and enjoy.
And there you have it. The final way to cook corn to perfection. Whether microwaved, baked, broiled, sautéed, or roasted, you have to work really hard to ruin perfection.

  1. Thank you for the great corn recipes! I have a bunch of canned corn and have been looking for some new ideas and recipes! The Roasted Sweet Corn salsa sounds like something I may have to try and if it works out maybe even a good recipe to can too!
