Cooking Chicken feet Dim Sum Style

Chicken feet is a Chinese cuisine regarded as the most flavorful dim sum served in most Chinese restaurants.
The feet of a chicken consist mostly of tendons and skin with no muscle, the reason why it is gelatinous and this distinct texture made it more appetizing to devour on.
This simple yet tasty cuisine can be home prepared. A friend of mine taught me how to cook Chicken feet Dim Sum Style.

1 kilogram chicken feet
Cooking oil
4-6 cups of water
1 big fresh ginger
2-3 pieces star anise (Illicium verum)
Chinese parsley roots
malt sugar (syrup made from made from malted grains like barley, which can be bought online, just in case you can’t see it in supermarkets)
Marinade ingredients:
oyster sauce
soy sauce
chopped green pepper
garlic, minced
ground pepper
black bean sauce
sesame seed oil
Food color (optional)
First, wash the chicken feet thoroughly and chop off toenails. Cut the feet into quarters.
On a wok, heat the oil, fry the chicken feet and mix the malt sugar. Fry them until golden brown.  Remove the feet and drain.
On a separate casserole, boil water, add ginger, star anise, parsley roots and the chicken feet.  Once boiling, reduce heat and simmer for 1 hour or more until chicken feet are tender. Drain.
Now, marinate the feet overnight. On the next day, steam the feet with the marinade for 15 minutes.
Serve while hot and enjoy!
