Yesterday, my children requested Chicken Morcon for dinner. I said yes not yet checking in my freezer to see if I still have a stock of chicken breast fillets. As it was raining hard outside and my husband was not yet home to drive me to the nearest supermarket, it would have been hard and unsafe for me to go out in the bad weather. As I was thinking on where I can buy the chicken breast I need for my recipe, my youngest son reminded me to call the grocery store near to us that offers free delivery on grocery purchases. Well, definitely that was a brilliant idea; I will not need to go out in the rain and at the same time I can be saving money on recipes using vouchers through online or telephone grocery orders. Voila! The chicken breast fillet I ordered came in no time at all.
Here, I will share you my version of cooking Chicken Morcon.
Ingredients:
Chicken breast fillet, 4 pieces to yield 4 servings
Salt and pepper to taste
1 Carrot, cut into sticks
Pickles, cut into sticks
Cheddar cheese, cut into sticks
Cooking oil
½ cup tomato sauce
1 bay leaf
½ cup water
Procedure:
The preparation and cooking time is more or less one hour. First flatten the chicken breast fillets with a mallet until you form a thin sheet.
Season with salt and pepper.
On each fillet, place a stick of carrot, pickles and cheddar cheese.
Roll up the fillets and secure with toothpicks.
In a pan, heat 2 -3 tablespoons of cooking oil then brown the chicken rolls.
Pour in the tomato sauce, water and add the bay leaf.
Simmer until the chicken is tender and then season to taste.
