Chicken Curry is one of the chicken recipes, cooked straight from my kitchen.  It is very easy to cook and at the same time a healthy viand for the family.

1 wholechicken
Freshlysqueezed Coconut milk
Curry powder
Onion, diced
Ginger, diced
Palm oil
1 to 2 piecesof green or red bell pepper, sliced
Salt andpepper to taste
Slice the chicken into serving sizes, wash thoroughly taking off the transparent slimy portion found in between the meat and chicken skin which causes the stench taste.
Sauté garlic,onion, and ginger, then add the chicken, stir fry until medium cooked
Pour in enough freshly squeezed coconut milk. Bring it to boil, stir frequently. Once boiling, lower the heat and simmer it for 10-15 minutes.
You will notice that the coconut milk will change its color, add half a teaspoon to one teaspoon of curry powder according to your preferred taste.
Add the bell pepper,then salt and pepper to taste.
Simmer more for a few minutes and you’re done!
