Binagoongan

It has been a while since I cook Binagoongan.  Bagoong alamang (shrimp paste) with cubed pork.  This dish may be eaten with kare-kare, a dipping sauce for green mango or can be eaten as a viand with rice.

Ingredients:
1/2 kilo  Bagoong Alamang (shrimp paste)
1/2 kilo  Pork Liempo, cubed
Garlic, minced
Onion, sliced
Vinegar
Palm oil
Procedure:
In a pan saute onion and garlic, add the shrimp paste then the pork cubes.  Simmer until the pork is tender.
Pour one fourth cup vinegar or less according to your taste, wait for it to boil again before stirring. Simmer for another 5-10 minutes then its ready to serve.
Note: Before cooking, check first the Bagoong Alamang if its too salty, add water in it and use a  strainer to take off its saltiness.
I also recommend to use fresh Bagoong Alamang rather than the bottled ones bought in groceries and supermarkets.

  1. I buy bagoong na por kilo, iyong nakalagay sa isang malaking plastic container sa may fish section, di sya maalat and masarap talaga iluto unlike yung light colored minsan eh pink na, maalat saka di na daw puro yun kaya mura..
