Pancit Molo

This is my version of Pancit Molo.  The noodles I used are the fresh thin molo noodles.

Fresh Thin Molo Noodles
Chicken breast diced
Chicken stock/broth
garlic, minced
onions, sliced
Kinchay (parsley) 
Palm oil

Boil the chicken breast until it’s tender, put on a cube of chicken boullion.  
Take off the chicken breast from the stock/broth, let it cool then diced it.
Set aside the chicken broth
Wash through running water the fresh Molo noodles using a big strainer
Saute garlic, onion and chicken, then add the molo noodles, stir.  
Add the chicken broth, season it with salt and pepper.
Bring to boil, then simmer for a while until the noodles are cooked.
Add the Kinchay (parsley) and you’re done!

Serve while it’s hot. 

The reason why I wash the fresh noodles is to take off the bitter taste.  My children doesn’t want the big molo noodles, they prefer the thin noodles. (lol)

  2. My lola's pansit molo looks different from this one. It's color orange and she uses flat noodles. 😉 Pero this looks just as delish din.
