Kare-kareng Pata ng Baboy

Sunday is always a family day with our parents, so we plan our special viand for this particular day to make a feisty and enjoyable lunch. Last Sunday, we also invited my younger sister and her family to eat lunch with us. My sister and I cooked Kare-kareng pata ng baboy and I also made macaroni salad for our merienda. Everybody was in full smiles and in full stomach after the hearty delicious lunch :)

simmering Kare-kare

My youngest son’s solo serving bowl

Ingredients:

3 kilos pata ng baboy (pork leg), chopped into preferred sizes

Puso ng saging ( long banana bud/ blossom)

Eggplant, slant cut

Sitaw (string beans)

Pechay tagalog

1 ½ kilos Ground peanuts

¼  kilo Ground uncooked rice

Soy sauce

2 onions, quartered

2 knorr pork cubes

Palm oil

Garlic crushed

Bagoong alamang, bottled or sauteed

Cooking Procedure:

In a big stock pot, add water, quartered onions and the pork leg, bring to boil until tender. Take out the pork leg from the stock, set aside.

Simmer the stock then add the knorr pork cubes, slowly add the ground uncooked rice and ground peanuts keep on stirring until well blended. Continue simmering for another 10- 15 minutes, stirring once in a while.

Sautee the vegetables in oil and crushed garlic in a separate pan. Set aside.

Add soysauce to taste then add the pork leg and vegetables in the simmering stock, cook for another 10 minutes.

You may cook your own bagoong alamang or just serve the ready to eat bottled bagoong bought in supermarkets.

Kare-kare is one of my most favorite dishes most especially the ox tripe. :) I want din if all natural ingredients ang gagamitin…yung tipong ako ang magdidikdik ng peanut at bigas. mas malinamnam!
