Deveined and peeled shrimps, 12 oz.
Unripe frozen mango, 2c of cubed pieces
Shredded coconut (unsweetened and toasted), 1/4 c
Vegetable oil, 3 tablespoon
Chopped onion, 1c
Garlic finely minced, 2 teaspoon
Flakes of red chili, 1 teaspoon
Soy sauce, 2 tablespoons
Basil leaves, freshly chopped, ½ c
Lime juice, 1 tablespoon
Preparing Mango Shrimp
At first take large frying pan and pour oil in it. Now, heat the oil over medium flame and sauté the chopped onions till they turn golden. Fry the onions for about 5 minutes. Now, add in the finely minced garlic, basil, chili flakes, lime juice, soy sauce and basil. Add in the shrimps as well. Keep cooking until each piece of shrimp turns pink. It will take around 3-5 minutes for the shrimps to get fully cooked. Now add in the mango cubes and continue cooking until it turns warm. After you are finished with cooking, sprinkle shredded coconut on top and serve the same with steamed rice, preferably jasmine.
